Beverly “Bev” Ann Kopischke, age 86, of North Mankato, MN died at her home surrounded by her children on December 9, 2024. Funeral service will be 11:00 a.m. Tuesday, December 17 at Hosanna Lutheran Church in Mankato. Visitation will be 4-7 p.m. Monday at Woodland Hills Funeral Home and will continue at the church 1 hour prior to the service. Interment will be at Woodland Hills Memorial Park, Mankato, MN.
Beverly was born November 9, 1938 in Minnesota Lake, MN to John Henry and Margaret Ida Anna (Werner) Jacobsen. She grew up and attended school in Minnesota Lake. March 20, 1961, she married the love of her life Harvey Wayne Kopischke in Ft. Dodge, IA. She babysat and worked for Keefe Catering, worked for Mid Tex for 20 years, MICO for 37 years. Bev loved baking, especially her famous cookies, cooking, gardening, throwing darts, casinos, fishing and sewing Christmas Stockings.
Bev is survived by her 3 sons and 2 daughters, Jeffery (Diane Lynn) Kopischke of San Diego, CA, Rory (Renae) Kopischke of Mankato, Kim Kopischke of Mankato, Monty (Vicki) Kopischke of Mankato, Jody Sistrunk of Mankato; grandchildren, Cassondra, Ashley, Hayley, Dylan, Derrik (Sydney), Tori, Taylor, Alexis, Landon, Nathaly, Christal and Alex; 8 great-great grandchildren; brother-in-law, Terry (Brenda) Herbst and family. She was preceded in death by her parents, husband, Harvey; step-brother, Daryl; step-mother, Irma Jacobsen; brother-in-law, Tyrone Herbst; uncle and aunt, Bobby and Ardella Werner who Bev considered to be like a mother and father to her.
